Many employees use their phone to capture images for AP Invoices, so having the ability to add and see these native Apple images to invoices (and Expenses or anywhere else for that matter that .JPGs are allowed) would be a huge help. Users wouldn't have to convert them to JPGs. Currently the images can be attached, but don't display the image. It can only be downloaded, which causes more work for the end user going through invoices.

I sent it to our support staff. The problem there is we have to touch every phone that has the issue. It would be much more convenient if HFF would render HEIC images like it does for other formats.

Can your employees use compatible image formats on their iPhone?
Settings > Photos > Transfer to Mac or PC > set to Automatic
Settings > Camera > Formats > set to Most Compatible

Largest size in pixels is set to 2000 which hasn’t changed since Jan 2019. We’ve never run into this until now, but we had a couple users run into it this week.

I've never ran into this problem on my iPhone. Are you currently using the Administration / Initial Setup > General Configuration > "Largest size (in pixels) of an image side uploaded to the Portal" portal setting?
