In the document library, would like to create a Document Mode that is NOT signature or acknowledgement required.
Would like documents with all the features of documents to be listed by date but do not want to require users to have to acknowledge the documents

That would be better at least. I think they want to add them to the grid below too though so the users can sort by date and such though.

If we added the body section for any custom text or notes to the Library Items, would that work for what you need?

That's the functionality we are using right now.
The reason we would like Documents is that Library items are categorized (we don't want/need that) and doesn't allow a body, only a link or attachment. We are looking at literally exactly what Documents are but without requiring acknowledgement or notifications going out.

This sounds a lot like the functionality we have for the Library Item mode documents. With Library Items, you can provide employees access to documents for their review at anytime without requiring them to acknowledge or sign anything.
