If I have a document that requires a signature that I have built in custom tasks, it would be great to be able to also use it in the library as a doc requiring signature - especially if it needs updating every year.,

When you say custom tasks, are you referring to Onboarding tasks? If so, you can create Library Docs for PDFs that need to be reviewed and then signed. These should show up as an option to add to your Onboarding Profiles.
